烹饪方法
1. 将茄子去蒂、皮洗净,切成长条;
2. 胡萝卜洗净,切成条;
3. 油菜择洗干净,切成段;
4. 淀粉放碗内加水调成湿淀粉;
6. 香菜择洗干净,切成末;
7. 炒锅注油烧至六成热,放入茄条炸至金黄色,捞出控油;
8. 胡萝卜条过油捞出,油菜段下入锅内略炒;
9. 炒锅注油烧热,下入姜丝、炝锅,放入水、豆瓣酱、白糖、料酒、味精、茄条、胡萝卜条烧开;
10. 撇去浮沫,用水淀粉勾芡,倒入沙锅内,放入油菜焖几分钟,撒入香菜末即可。
